Cochon555 – the national culinary tour featuring 5 chefs competing on their best pork dishes – came to Austin this weekend and named Chef Gabe Erales of Comedor the champion. Chef Erales will represent Austin at Grand Cochon, the national finale on September 15 in Chicago.
Over 600 guests feasted on over 1,500 pounds of heritage breed pork prepared by the afternoon’s chefs.
This year’s competing chefs were Chef James Flowers of Ciclo, Chef Brian Moses of Olive & June, Chef Geronimo Lopez of BOTIKA, Chef Jo Chan of Eberly and Chef Gabe Erales of Comedor. Chef Erales’ winning menu included Pork Fat Aged Mushrooms, Chintestle Glazed Pork, Cecina, Pig Liver Mousse & Churros, Pig Bone Panna Cotta and Yucatan Taco of Castacan.
The event raised $3,953, proceeds of which will support Piggy Bank, a charitable foundation and start-up farm in Missouri that serves as a kickstarter for emerging family farms, as well as a safety net for farms in the wake of a disaster (flood, fire and disease).
